Bhaji's
Ingredients
Makes 40 bhaji’s
(batter)
2 mugs of sifted chickpea flour (gram flour)
3 desrt spoons yogurt
2 tsps ginger
1 heaped tsp garlic
½ tsp green chilli
½ tsp red chilli powder
2 tsp coriander powder
1 heaped tsp jeera
1 tsp garam masala
½ tumeric
1 tsp seasame seed optional
vegetables for batter:
any 1 or mixture of vegetables can be used for this recipe, the following is my suggestion:
7 large mushrooms sliced
1 large onon sliced
1 large potato, chopped ½ cm cubed
4 desert spoons finely chopped white cabbage
sunflower oil for frying
Method
mix all batter ingredients in blender with water until mixture is twice as thick as normal cake mixture, if required, add more flower
add all vegetables and mix well
add mixture into deep fat fryer 1 heaped desert spoon at a time
cook an each side for 1 minute or until golden brown
place in deep dish with absorbant kitchen tissue to remove excess oil
serve warm with mint sauce and green salad garnish
