Date and Tamarind Chutney

Ingredients

8 fresh dates

8 tlb tamarind

1 tlb jaggery or sugar

½ tsp red chilli (optional)

½ salt

Method

Add dates and tamarind in ½ pint of boiling water, simmer until ing4redients are tender and water has reduced by ½

Sieves through the mixture, squeezing as much out of the tamarind as possible (should be of a think eg. Cheese sauce consistency) – ad water if necessary
