Ingredients
6oz
Self-raising flour
6oz
Margarine
6oz
Caster Sugar
3
eggs
2tlb
Milk
Grated
rind of two lemons
Juice
of two lemons
Granulated
Sugar (as much as it takes to make a syrupy texture)
OR
Lemon Icing
Juice
of one lemon
Icing
sugar (enough to make thick paste for frosting/icing)
Method
Set
Oven at 180 degrees Celsius
Grease
loaf tin
Put
all ingredients into a food processor into a cake mixture consistency
Pour
into tin and cook for 35-40mins until firm to touch in the middle.
If
using the syrup fork/knife the top of the cake and spoon the syrup on top of the
cake whilst in the tin or follow step 6
If
using lemon icing Cool the sponge and ice the top of the cake and refrigerate
until set.
Slice
and serve moist enough to eat on its own!!! Delicious…
