Spicy Pitta’s

  Ingredients

Makes 12 Large Pittas

 300g Passatta

½ tsp Ginger

½ Crushed Green Chilli

½ Tsp Garlic

¼ tsp coriander powder

¼ tsp Jeera/Cumin powder

¼ tsp Garam Masala

¼ tsp turmeric

1 tlb Fresh Coriander

¼ tsp salt

¼ tsp red chilli powder

400g Grated Mature cheddar - (red Leicester is also good for taste and colour, try mixing them)

6 large Pitta breads

2 Tsp Italian Mixed Herbs

 

Method

In a small pan add Passatta, Ginger, Garlic, chilli, cover and simmer on low heat for 5 mins

Add all other ingredients EXCEPT Fresh coriander, herbs & Pitta bread. Stir, cover & cook

for further 10mins. Stirring occasionally. Add fresh Coriander

Stir and allow to cool

Spread the Sauce evenly across the 12 pittas, and place on shallow baking tray

Top with grated cheese and sprinkle a little mixed herbs

Place under a hot Grill for 2 mins or until cheese starts to bubble.
