Oyster Salsa Crunch

 

Ingredients

Serves 2

10 oyster mushrooms

2 tlb double cream

1 tlb roughly chopped basil or coriander

2 slices of medium fresh white bread (without crust)

2 tlb Olive Oils

Parmesan Shaving (use a good quality parmesan-optional

 

Salsa (use a ready made one if preferred): -

8 cherry tomatoes (deseed 4 of them)

1 small green Chilli or Jalapeno crushed (Optional)

Method

Place bread in oven until crispy like a crouton.

Place tomato and chilli in a frying pan and sauté for 30 seconds or so

Add olive oil and mushroom in another frying pan, sauté for 2 mins

Add cream and basil, cook for a further 30 seconds

Place 1 toast on a starter plate, spread ˝ salsa sauce on the toast

Pour ˝ of the mushroom mixture around and on top of the salsa toast

Top with Parmesan (if Using)

Repeat last 3 steps for the second toast

Serve immediately
