Eastern Stir-Fry Rice

Serves 5-8 people

Ingredients

Vegetables – use any vegetables you like the below is just a suggested combination: -

 1 small red pepper

1 Small Green Pepper

Finely Sliced small/Medium Onion – red or white

6 Baby sweet corn

25g Petit Pois

50g Quorn pieces

4 tlb olive oil

20g Butter

2 Bay Leaves

1 Large Cinnamon stick

2 tsp Soy Sauce

6 dessert spoons tomato sauce

1 tlb fresh chopped coriander

1 tsp salt

1tsp crushed ginger

1 tsp crushed Garlic

½ tsp red chilli or paprika

½ tsp Oregano

Rice

As per recipe for Basmati Rice – made up the previous day if possible

 

Method

Add olive oil butter cinnamon stick Bay leaves in a large wok, sauté for 2mins on medium heat

Add all vegetables and stir-fry for about 5mins – until vegetables are starting to tenderise – keep slightly crisp

Add all other ingredients except the rice and stir fry for another 5 mins, making sure the vegetables do not over cook

Add Rice and stir-fry for further two minutes

Serve immediately – enjoy as a meal with yoghurt or with a spicy from the selection
